Our kids want variety when it comes to the food that you put into their lunchboxes. As a mom, I try many different things in order to entice their appetite. Something nutritious and tasty to encourage them to eat well in school.
Egg is one of main sources of energy — that’s why it is always included in a lot of breakfast menu, and this is perfect for kids. As they try cope up with the rigors of school life, they need the energy in order to function well. With that in mind, I have concocted a sandwich spread that is easy to prepare.
Ingredients: 3 hard boiled eggs, 6 crabsticks, 1 Tbsp of finely chopped onion, 3/4 C mayonnaise, salt and pepper to taste.

In a bowl, chopped the eggs and the crabstick. Add the onions and the mayonnaise. Season to taste.

Spread it on you favorite bread. You can add lettuce and tomatoes for garnishing or whatever your choice. Enjoy!
